Eggs were the last food for me to give up and hands down the toughest for me to give up. I grew up eating scrambled eggs and toast, or my FAVORITE, an egg, and cheese sammmmich. THANK GOD my beloved vegan scrambled eggs made it so I NEVER had to really walk away from them. (or so my tastebuds think…)
But Eggs Are Good For Dieting?
The funny thing is how many people turn to eggs in terms of “dieting” and “health kicks.” How many of us see that co-working trying to lose 10lbs and shes eating carrot sticks and hard-boiled eggs? Welp Karen – your cholesterol is through the roof. We highly suggest you indulge in What The Health, because it totally changed our viewpoints on eggs.
I actually started watching that documentary and the MINUTE they started talking about eggs I said out loud “NOOOOO, don’t talk about the eggs!!!” Because I knew the second I heard everything they had to say – that was it. That would push me to become a full vegan.

I miss eggs. I do. I’d be lying if I said I didn’t. BUT, it wasn’t until this past summer that I taught myself how to make the PERFECT vegan egg scramble. There are vegan egg replacers out there. The vegan egg is one, Just Egg, is another! Both are good – but can easily be pricey and semi odd tasting.
The Terrifying Tofu Egg (Aka- Vegan Scrambled Eggs)
I’m going to give you a disclaimer – for those afraid of tofu- this recipe is tofu-based and I PROMISE you – you won’t hate it. Not for a minute. Lynn isn’t a huge tofu person, she struggles with the texture sometimes. But she loves when we have breakfast for dinner and I bang out these tofu scrambled eggs. She eats it ALL. So, if SHE can devour these guys – so can you!
Best part? NO CHOLESTEROL!!!!! Leave those yucky chicken cholesterol filled periods in the past and let’s try the eggs of the future!
Vegan Scrambled Eggs Recipe
TIPS
- Add in veggies like chopped up green peppers and onions for the perfect vegan egg scramble
- Use vegan shredded cheese and let melt on top after vegan eggs are done cooking
- Make a breakfast wrap! I do this ALL the time! Add beans, salsa, and guac if you want a Mexican-y vibe!
- When crumbling the tofu in your skillet – use a potato masher! Makes everything SO SO SO much stinkin’ easier!
