Some of the best recipes happen when you’re the hungriest and the least interested in cooking you’ve ever been, I’ve learned this through the years. Sundays in our house is pasta. Growing up with heavy Italian influences on both sides of my family we had pasta often in our house, but never on a set day.
Sundays are for relaxing, family, and drool worthy food.
This ritual didn’t happen overnight, or by planning. It quite literally just happened by us having pasta coincidentally every Sunday for about a month! I said – I actually really like this. I love a good cozy Sunday in comfy sweatpants, that extra cup of coffee, and the tranquility of being in the kitchen with salt lamps and candles lit cooking for the ones you love.
This pasta should also be called Marry Me pasta. Because whoever you make this for is going to want to eat this for a lifetime! I speak from experience, I made this tonight for the first time and my fiancé just about died and went to heaven. Three times during dinner she said “babe this is seriously so good!” And then the award winning line “I think this is what I want for my birthday dinner!” It’s just that good. So if you’re trying to impress someone special – I’m nudging you hard to make them this pasta!
Isn’t it the best when we find beyond great recipes that require few ingredients AND not a lot of time?!

Ingredients –
- Olive Oil – quality really matters here in my opinion! Graza is the very best olive oil I’ve ever used! I struggle to not drink it while cooking, it’s that good! They also make a version JUST for dipping! Find that HERE
- Garlic – minced
- 12 oz Pasta – Shells or Elbows work well (my fiancé is gf so we used THIS brand)
- 2 TBSP Vegan Butter
- 1 Container Vegetable Broth
- 3/4 Tube of Tomato Paste
- 1/2 Dairy Free Creamer (We used Silk Original)
- Parsley & Salt to taste
This pasta comes together in a snap! One pan, the pasta cooks in the broth until there’s very little liquid left, tomato paste and dairy free cream is added to create this gorgeous, silky, ROMANTIC and dreamy pasta! If you make this please tag us in it! We love seeing your creations!
