Easy Vegan Breakfast Ideas

For some reason, a vegan breakfast is one of the biggest concerns for newbies when they begin their journeys. A lot of people are in need of fast, quick, breakfasts in the morning and this whole article is geared towards helping YOUR vegan self find a simple, vegan, nutritious breakfast each and every morning. Let’s dive in!

Vegan Breakfast Burritos Anyone?

The Breakfast Burrito of Vegan CHAMPS – These are so easy to make and to meal prep and freeze! Make a nice big bowl of vegan scrambled eggs. Chop up some green or red peppers. (Or any color peppers). Choose spinach or kale (we always choose spinach for this) You can add black or pinto beans to the wrap if you want to also! Roll it up, eat it or freeze it! Feel free to add vegan cheese if that’s your jam! If you freeze them wrap them individually in aluminum foil and pop into the microwave before heading out the door! Micro times will vary depending on the microwave – start one minute at a time!

Toast – The Snack That’s Unbeatable

There are TWO main types of toast that are devoured in my plant-based home. Peanut butter, and avocado. I’m gonna break them both down for you.

PB Toast- This is my go-to if I’m really hustlin’ out the door. PB keeps me full for such a long time and it’s much faster than chopping up an avocado. Yes, its simple, but sometimes you REALLY don’t have the time for even the simplest of tasks first thing in the morning. We use organic whole wheat bread and smother it with organic peanut butter. Nuff’ said. Doesn’t get simpler than that, folks.

Avocado Toast- Breakfast, lunch, brunch, or snack?! Does it matter? Avocado toast is probably in the top 10 of my favorite foods. I usually make this one of two ways. The first I take half of an avocado per slice of bread. If momma’s STARVING I’ll eat both halves of the avocado and two pieces of whole wheat bread. (this is real vegan life you guys, no god damn carb counting here – EVER – and that’s a promise) Sometimes I add a sliced tomato on top with just some sea salt and black pepper. Other times I skip the tomato and top the avocado with red chili flakes, garlic powder, and sea salt. AMAZE-BALLS.

So this one isn’t really “on the go.” Unless of course youre an incredibly talented driver, or distracted…LOL But cereal is the OG quick breakfast. Let’s see which ones are vegan!

Oatmeal!

This is probably my go-to every morning breakfast. I don’t have a schedule where I have to be at work crazy early which I’m super grateful for. I love having my oatmeal every morning and always wait until I’m starving to enjoy it. Don’t resort to the prepackaged oatmeal loaded with added sugars and junk, making your own is SO easy, and SO much better for you! I’m going to give you some options!

  1. Sweet Oatmeal & Fruit- Oatmeal cooked with almond milk, once cooked add a heaping spoon of almond butter or peanut butter depending on your mood, a splash of organic maple syrup (for sweetening) and some chopped up fruit. I always go for as much fruit as I can. My usual is strawberries, blueberries, and raspberries.
  2. Chocolate Covered Strawberry Oatmeal- Oatmeal cooked with almond milk and about a TBSP of cocoa powder (adjust to your liking) add in a splash of maple syrup, a heaping spoonful of almond butter, and sliced strawberries!
  3. Chocolate Chip Cookie Oatmeal- Same recipe as #1, just adding chocolate chips instead of fruit! Add PB instead of almond butter for a peanut butter cookie flavor! Almond butter will give you more of the Toll House cookie vibe!

Freezable Waffles & Pancakes?!

Guys…the Whole Foods 365 frozen waffles are VEGAN. Game changer. IF you have kids, if you ARE a kid (but you’re 30) no ones judging. Everyone LOVES frozen waffles. Eggo’s anyone?! These are a lifesaver in the morning! Top with organic syrup and fruit, or slap some PB on it and run out the door! Whatever your morning looks like, these waffles will fit into the routine, I promise!

PANCAKES. In the freezer?!

Yes. Did you guys know that many store brand pancake mixes are vegan?! Use flax eggs instead of real eggs, and almond milk instead of dairy milk and you’ll have yourself a vegan pancake fiesta! Wrap them individually after they’ve cooled, and pop in the micro whenever you’re feelin’ pancakes!

We’ve also tried, Castle Kitchen’s Banana Pancake mix! Clearly labeled vegan which we can all appreciate! They were wonderful! We haven’t tried freezing them, but I absolutely would and wouldn’t think there would be an issue!
